2 large onions
2 cans Libby's sliced beets (drained) (I've been starting with fresh beets, instead of canned beets.)
1/3 cup salad oil
1/3 cup white vinegar
1/2 cup sugar
3/4 tsp salt
1/2 tsp pepper
In the microwave, heat the oil, vinegar, sugar, salt and pepper until boiling.
Add 2 large, thinly sliced, onions and stir.
Add the beets and marinade together while warm.
Refrigerate and serve cool.
Broccoli Salad
1 large head of broccoli (I use a total of 5 stocks of broccoli) 7 strips of bacon (or you can do without if you don't like bacon) 1 cup sunflower seeds 3/4 cup raisins Chopped onion to taste (I use red) 1/2 cup Miracle Whip (I use the Light) 4 tblsp sugar 1 tblsp vinegar Fry the bacon until crisp and cut up. Wash and finely chop the broccoli In a bowl, combine the bacon and broccoli with sunflower seeds,raisins, and onions. Prepare dressing by combining the Miracle Whip, sugar, and vinegar in a separate bowlPour dressing over salad ingredients and marinate overnight.
This is a great salad because the longer it sits the better it tastes!
